So…was the popcorn gluten-free?

For those of you who have been eagerly awaiting word on the Arrowhead Mills popcorn question, I have an update. I finally got around to calling their customer service line yesterday (there was no great rush since I had, after all, already eaten it all).

The woman I spoke to—following some appropriately corny hold music—confirmed my suspicion: the popcorn is not made on dedicated gluten-free lines or in a dedicated facility. However, she assured me that they follow “good manufacturing practices” of sterilizing lines between runs, etc. She said that any of their products that have already been found to contain less than 20 ppm gluten would have the gluten-free symbol on the bag, and that they’re working on testing their way through all of their products. They have not yet tested the popcorn.

I asked, “So, conceivably in six months’ time, the popcorn might have a gluten-free symbol?,” but she said she didn’t know and couldn’t speculate on the timeline. Fair enough, because I’m sure the last thing any company wants is some blogger hopping online and posting false promises that, say, all of their products will be gluten-free by 2020. Plus, unless I stumbled across a Time-Turner, it’s not as though knowing their product will be confirmed gluten-free in six months would do me any good.

I wondered why they would test some of their products but not others, and why it takes so long to test everything. Is testing for gluten that expensive and/or time-consuming? Does anyone have any insight into this?

A couple of you commented that most popcorn should be safe. Personally, I’ve noticed some issues after eating popcorn, but there’s a good chance my weary GI tract just isn’t happy about handling large bowls of air- and fiber-filled corn right now. That’s not going to stop me from eating it, but I am going to check around for another popcorn brand. Though the Arrowhead Mills stuff might be safe, I’d feel better knowing the popcorn was either tested for gluten or processed far, far away from gluten. I will still buy other Arrowhead Mills products that say “gluten-free” on the bag, because it sounds like they have their act together.

Since the Arrowhead answer was a resounding “I don’t know,” I don’t really know whether or not to doubt my old air-popping cauldron. It’s been starting to die anyway, so I may just take the road of “When in doubt, throw it out” and get a new one.

On to another kind of testing: this morning I got NINE vials of blood taken out of my arm, to find out if my gut is still gutting itself. (The phlebotomist assured me I still had plenty of blood left in me; I’m not so sure.) As I left the lab, I found myself thinking, “Celiac’s blood…that’s got to be an ingredient in some kind of potion.”

My first-ever gluten nightmare was like that (but without the adorable baby photos). I think in the dream it was my mom who gave me the cookies—sorry, Mom, I know you’d never really do that!

Last night I had a new one: I dreamed I ate a box of Triscuits. When someone pointed out Triscuits aren’t gluten-free, my dream self was baffled. “I just…forgot!” she said.

Ha, ha, dream self. No forgetting allowed.

And, of course, there’s the ever-recurring waking nightmare of the newly diagnosed: It’s a year from now, and my doctor is showing me my chart and saying, “Turns out, you’re an asymptomatic celiac who just happens to have lots of other stuff wrong with you!”

Terrifying.

Luckily, even after a sleepless night, cute photos of children eating cookies always cheer me up.

Meda ase, Ghana Cafe! (Gluten-free in DC)

I’m not going to make a habit of reviewing restaurants on this blog, partly because I almost never go to them. I swore them off on January 29th until I’m feeling better, per standard recommendations. However, I admit that I’ve “cheated” and gone out to eat three times since then, at three different restaurants.

One was Sacred Chow near NYU (where I was sad to learn they’d changed their menu from the previous small plates format). I was dining with a gluten-free companion who swore up and down that they were good about cross-contamination, and our waiter made similar assurances. Lack of tapas aside, the meal was tasty as always, but I still didn’t feel right about it. After that I renewed my vow to pass on restaurants that weren’t strictly gluten-free until the time is right.

The two restaurants I’ve made exceptions for since then both claim entirely gluten-free menus: the newish Hu Kitchen near Union Square (paleo and veg-friendly, not so easy to pull off) and Ghana Cafe in Washington, DC, while I was visiting my brother Patrick (warning: their website plays drums at you).

I was excited to learn that the cuisine of Ghana traditionally uses cornmeal and rice rather than wheat (or other gluten-containing grains) as staples, meaning the food is naturally gluten-free. When I called in advance, the staff member assured me that everything was gluten-free. In person, our waiter (who I believe was in fact the owner, though he didn’t introduce himself as such) reassured us that everything was gluten-free, and also volunteered that it was dairy-free and GMO-free. Fine by me!

This sauce (which we didn’t get to try on its own, though I think it was in Pat’s dish) is available for sale on their website in terrifying bulk quantities.

He also let us know that select products of theirs are available at their local Whole Foods (so far, only their hot sauce, but they’d just dropped off samples of other dishes, including the peanut soup that I had, and were hoping they’d get picked up—good luck!).

I had a rice and black-eyed pea pilaf-style dish (wakye, I think) with peanut soup, and Pat and I split a dish called banku, made of fermented corn, which was a slightly sour polenta-bready thing. I liked it plain; though it was quite bland, it struck me as great comfort food. It became magical when dunked in the peanut soup or spread with the incredible spice mixture that came out with it. This mix was their housemade shito, which is normally based on seafood but which they make vegan. They didn’t want to give away their recipe, but I got confirmation that it was “just spices.” Have you had it?

Big brother Pat ordered the jollof (tomatoey, spiced) rice with snapper. I think he was a bit surprised when his entrée came out as an entire fish, head and all . . .

. . . but that didn’t stop him from eating it. I didn’t stop him either, despite staring at it with perturbed fascination and commenting, “You can still see its little teeth!” and “It’s frowning at me!”

Yeah, I’m that vegetarian.

Anyway, it was a wonderful meal, and the restaurant, I think, is an underappreciated gem, which is why I wanted to be sure to write a review. Atmosphere-wise, it was fine—brightly colored tables, not-too-loud music, and large windows to the street that we sat by. Our waiter and busboy were friendly and forthcoming. Somewhat pricey, but very good food.

I was sort of nervous to go, though, because so few gluten-freers were talking about it online. I found one Yelper who spoke (yelped?) highly of it (others didn’t even mention the gluten-free menu, and many complained about slow service, which, to be fair, we also experienced—Pat and I agreed to term it “relaxed,” but we could’ve gone for a water refill or two, especially with the smallish glasses). A DC Celiac Support Group member also wrote a favorable review, but the restaurant didn’t make it into the most recently updated version of their GF-friendly restaurants list.

Another reason I can’t do restaurant reviews: I don’t think to take pictures until the food is gone, and then I beg my dining companions to take them with low-quality cell phone cameras.

Given that my “stuff” isn’t under control, I suppose I shouldn’t have eaten out yet, even with all the reassurances, but I’m not beating myself up over it. I was on vacation, the world didn’t end, and I enjoyed my food. It was also nice to have three different dishes without having to do any dishes after. Best of all, my meal was free. (Thanks, Pat!)

Of course, if you don’t have your big brother there to pick up the tab, your food won’t be free, but it will be gluten-free (and dairy-free, and GMO-free) and tasty. If you’re ever in the neighborhood, I definitely recommend Ghana Cafe. And if you get your hands on a decent banku or vegetarian shito recipe, let me know, because I’ll be all over that shito.

A feast fit for a gluten-free, vegetarian king (of the North)?

Jon-Snow-S3The other day, I tweeted “What #GameofThrones-themed snacks can I make that are #glutenfree and #vegetarian?”

No one replied.

Maybe that’s because my (many and adoring) Twitter followers don’t watch Game of Thrones. (What percentage of people following a gluten-free diet also follow Game of Thrones? A statistic worth investigating.) Maybe my question got lost in the evening Twitter rush. Or maybe people didn’t think it could be done.

Game of Thrones food is roughly based on medieval European cuisine. For most people, this calls to mind crusty loaves and legs of mutton—oh, and don’t forget the ale. Gluten-free vegetarian medieval food sounds almost oxymoronical. Throw in “Easter” as an additional theme and you’ve got yourself an impossibility, right?

Not exactly. Medieval cuisine might be linked in the modern imagination with meat and bread, but especially in tough times and among the lower classes, they weren’t as ubiquitous as we think.

Let’s start with meat. It wasn’t until the Black Death killed off most of Europe that meat became more available to commoners, because the shrunken labor force drove up wages and swathes of abandoned land became available for pasturing livestock. But in George R. R. Martin’s universe, so far as I can tell, there hasn’t been a plague precisely like the Black Death. The closest thing to it was the grey plague, a scourge that was successfully quarantined to a single city and therefore didn’t have as vast of an effect as the real-life plague. This suggests that at the time of telling, the majority of poorer people would have eaten mainly plant foods, not meat.

And gluten? Though grains made up much of the medieval diet, wheat was actually rather expensive. Barley, rye, buckwheat, millet, and oats were the most common choices (a couple of which are, as you know, gluten-free!). Plus, particularly after a lean harvest, it would have been common to use nut, pea, or bean flours along with grain flours to create bread. From there, it doesn’t require too much of a leap to get to the gluten-free flour blends of today. (Legumes, by the way, were not considered good for you, contrary to prevailing nutrition opinion today, which designates many former “peasant” foods as staples of a healthful diet.) Finally, although beer was a popular choice in this age of unfiltered water, wine was common, too, and that’s naturally gluten-free. (Plus vegetarian, as long as you choose a kind that wasn’t made using fish bladder…ew.)

A-Feast-of-Ice-Fire-Official-Game-of-Thrones-CookbookLike the medieval culture on which it is loosely based, the cuisine of Westeros does include gluten-free and plant-based options—enough, certainly, for a solid viewing party spread. Flipping through the contents of both the official and unofficial Game of Thrones cookbooks turns up lots of ideas: dried beans and nuts at the Wall, root cellar apples and veggies in the North, honeycomb from the Vale, leeks and greens from the lush Riverlands, stunning fruit desserts in the Reach, citrus and fiery spices in Dorne, and all of them coming together in the melting pot that is King’s Landing. I think I’ll pass on the fried locusts from across the Narrow Sea.

ed95_unofficial_game_of_thrones_cookbookWhat will I be making this Sunday? I’m not hosting the party, so I’ve got some conferring to do with the friend in charge. But I’ve put on my thinking cap (a warm one, since, you know, winter is coming). “Doran’s Favorite Chickpea Paste” sounds an awful lot like hummus, a classic GF-veg staple, and stuffed peppers and dates would please any palate, fantasy or modern-day. Throw in a cheese plate and some GF flatbread and you’ve pretty much got yourself a party. Oh, except for dessert. We’re considering hot-cross buns, which are vaguely medieval and perfect for Easter. There are some great GF recipes out there, and my new kitchen scale is just dying to pledge fealty to a proprietary GF blend. I am also tempted to try these hilarious (spoiler alert!) cake pops, but I’ll probably be too lazy.

Stay tuned and I’ll update you on the final menu sometime next week. In the meantime, know that you can be meat- and gluten-free in Westeros without being options-free. You just…might need to be a peasant. 

For this post, I sourced my medieval food facts from Wikipedia (which in turn sourced its info largely from Melitta Weiss Adamson’s Food in the Middle Ages, Regional Cuisines of Medieval Europe, and Food in Medieval Times). Though to give credit where credit’s really due, I’m pretty sure I heard most of it from my dad first (he blogs about food here). I pulled ideas for Sunday’s menu from the two books I linked to above and also wanted to call out the blog that spawned the official cookbook, Inn at the Crossroads, a must-read for fans of Game of Thrones and sustenance. Finally, I feel compelled here to admit that I have not read the books; I just watch the show. This runs contrary to all my media consumption principles, but those books are thick, and I keep pretty busy writing about gluten.
